Brothy rice with anchovies and spinach

Ingredients:

  • Olive oil 🫒
  • 250 gr. of rice 🍚
  • 1 liter of water or fish stock 🐟
  • 750 gr. of fresh anchovies 🐟
  • 250 gr. of spinach 🌱
  • Garlic 🧄
  • Ñora pepper 🌶️
  • Parsley 🌿
  • Salt 🧂
  • Saffron 🌸
  • Tomato 🍅

 

Preparation:

  1. Prepare the sofrito: In a pot, heat the olive oil 🫒 and fry the ñora pepper 🌶️. Once fried, set it aside in a mortar. Add the garlic 🧄, parsley 🌿, tomato 🍅, salt 🧂, and saffron 🌸. Grind everything together until you have a fragrant paste.

  2. Sauté the spinach 🌱: In the same pot, sauté the spinach 🌱 until softened. Then, add the paste you just made, stir well, and add the rice 🍚. Mix everything until well combined.

  3. Add the stock: Pour in the water or, for a richer flavor, fish stock 🐟. Cook for 20 minutes over medium heat. Halfway through cooking, add the fresh anchovies 🐟.

  4. Final cooking: Once the rice is cooked, turn off the heat and... it's ready! Serve and enjoy a dish full of tradition and flavor.
