Flavours of tradition

🍽️ Today we bring you a true culinary gem: a recipe that reflects the most authentic flavour of Benidorm. Are you ready to make it? Take note! 👇

 

📜 Ingredients:

🥟 For the dough:
✔️ 500 g flour
✔️ ½ large glass of sunflower oil
✔️ ½ large glass of olive oil (0.4º)
✔️ ½ large glass of milk
✔️ ½ large glass of white wine
✔️ A generous pinch of salt
✔️ 1 beaten egg (for brushing)

🍅 For the filling:
✔️ 2 large dry onions 🧅
✔️ 2 small cans of chopped natural tomato 🍅
✔️ 2-3 cans of tuna 🐟
✔️ 1 black pudding (with onion)
✔️ A touch of oregano 🌿
✔️ Olive oil for cooking

👨‍🍳 Step-by-step preparation:

🔥 1. Prepare the filling:

1️⃣ In a pan with hot oil, sauté the finely chopped onion until soft and golden.
2️⃣ Add the drained tomato and a bit of salt. Cook until the tomato reduces.
3️⃣ Remove from heat and add the drained and flaked tuna.
4️⃣ Sprinkle with oregano and crumble the black pudding. Mix well and set aside.

🥟 2. Prepare the dough:

1️⃣ Sift the flour with the salt into a large bowl.
2️⃣ Add the sunflower oil and knead well. Then, incorporate the olive oil and continue kneading.
3️⃣ Pour in the white wine and mix. Then, add the milk and keep kneading until you get a smooth, non-sticky dough.

🔥 3. Assemble the coca:

1️⃣ Grease a baking tray and roll out half of the dough to fully cover it.
2️⃣ Spread the filling evenly, leaving a small margin at the edges.
3️⃣ Roll out the other half of the dough on greased cling film and place it over the filling.
4️⃣ Seal the edges by pressing with your fingers and brush the surface with beaten egg.
5️⃣ Prick the top with a fork to prevent it from puffing up.

🔥 4. Bake and enjoy:

1️⃣ Preheat the oven to 200°C and bake the coca for 45 minutes until golden brown.
2️⃣ Check that the base is fully cooked before removing it.
