If you're looking for a hearty and flavourful dish, Pebrera Talladeta is a true gem of Mediterranean cuisine. 🍲💛 This delicious stew combines peppers, pumpkin, potatoes, and sangatxo (salted tuna), creating a comforting meal perfect for any season. 🌊🔥
🛒 Ingredients:
🥒 2 large green peppers
🌶️ 2 large red peppers
🍅 2 ripe tomatoes
🥔 3 potatoes
🎃 1 large piece of pumpkin (if you remember Ruperta, even better! 😉)
🐟 1 piece of sangatxo (salted tuna, soaked overnight)
🫑 2 dried ñora peppers
🧄 2 garlic cloves
🌿 2 sprigs of parsley
🥜 8-10 raw almonds with skin
🍞 1 slice of rustic bread
🫒 ½ glass of extra virgin olive oil
🧂 Salt to taste
🌾 Saffron or food colouring (optional)
💧 Water
1️⃣ 🔥 Creating the flavour base:
In a pot with hot olive oil, fry the ñora peppers (cut open and seedless) until golden. Be careful not to burn them, as they can turn bitter. 😬 Remove and set aside. In the same oil, fry the almonds and then the bread slice until golden and crispy. Set everything aside to cool.
2️⃣ 🛠️ Prepare the flavour-packed paste:
Once the fried ingredients have cooled, crush them in a mortar (or blend them) along with the garlic, parsley, and a pinch of salt. This will be the soul of the stew! 💛
3️⃣ 🍆🥔 Preparing the vegetables:
🔪 Cut the peppers into medium-sized squares.
🔪 Peel the tomatoes and dice them.
🔪 Peel the pumpkin, removing the hardest part of the skin, and cut it into large cubes.
🔪 Peel the potatoes and cut them into chunks similar in size to the pumpkin.
4️⃣ 🍳 The perfect sauté:
Using the reserved oil, fry the green pepper first, then remove it. Repeat the process with all the vegetables except the tomato. Once they’re slightly softened, return them to the pot and add the chopped tomatoes, two glasses of water, and the paste you prepared earlier. If you like, add a pinch of saffron or food colouring for a beautiful golden hue. 😍
5️⃣ ⏳ Slow cooking & final touches:
Simmer over low heat until the stew starts to thicken. Then, add the drained and chopped sangatxo and let it cook for a few more minutes. Adjust the salt and water if needed.

Once the vegetables are fully cooked (pumpkin can take slightly longer than potatoes 🧐), turn off the heat and let it rest for a few minutes before serving.
