San Blas Cake



1 -  1 kg almonds with skin, ground

2. – 12 eggs

3. – 800 gr corn flour

4.- Grated rind of two lemons

5- One tablespoon cinnamon powder

6. – olive oil as much as is necessary


Whisk egg whites to form firm peaks, add the yokes, sugar, cinnamon, lemon rind. Continue mixing adding the ground almonds, corn flour and oil. On grease proof paper and brushed with oil, mould into flat round shaped buns. Prick with a fork making a pattern and sprinkle with cinnamon and sugar. Bake in a preheated oven for approximately 30 minutes.
