🛒 Ingredients:


🥜 1 kg of almonds with skin, ground
🥚 12 eggs
🌽 800 g of corn flour
🍋 Zest of 2 lemons
🧂 1 tablespoon of ground cinnamon
🫒 Olive oil (as needed)
🧁 Sugar (for sprinkling)

 

👩‍🍳 Step-by-step guide for a perfect Bollo de San Blas

1️⃣ Whisk the egg whites 🥚
Beat the egg whites until stiff peaks form.

2️⃣ Add the aromatic ingredients 🍋✨
Gently mix in the egg yolks, sugar, cinnamon, and lemon zest, ensuring the mixture remains light and airy.

3️⃣ Incorporate the almonds and flour 🥜🌽
Gradually fold in the ground almonds and corn flour, mixing carefully. Then, slowly add the olive oil until you achieve a smooth, even dough.
